A common practice for that was eventually outlawed for coupling American railroad cars during the 1800's, but somehow was exempt from some industrial narrow guage railroads, was this metal drawbar or "link and Pin" style coupling.
The Hesston Steam Museum's trains are coupled this way. It's alright though, as the Hesston Steam Museum operates in a very controlled and safety concious environment operated by professionals.
